What is Kimchi?

Kimchi is a fermented vegetable side-dish that is a staple of Korean cuisine – no meal in Korea is complete without Kimchi. We find it also goes well with lots of Western and Asian foods – try it with everything and see what works for you.

What is Fermentation?

Lacto-fermentation is an ancient technique for preserving food and making it more digestible and nutritious. Kimchi, along with other naturally fermented foods, is one of the healthiest foods you can eat.

1 gram of Kimchi contains hundreds of millions of immunity-boosting lactic acid bacteria, as well as other vitamins, minerals and health-giving compounds. Eat some Kimchi every day and enjoy its many benefits.

Why Liverpool?

After travelling to South Korea in 2006, Paul Sullivan – Co-founder of KIMCHI Human – fell in love with Korean cuisine, in particular KIMCHI!

After introducing Korean cuisine and Kimchi to Merseyside via a small pop-up Noodle Bar at Static Gallery, Liverpool, between 2008/09, Sullivan dreamed of setting up a small Kimchi making facility that would be dedicated to perfecting traditional Korean Kimchi recipes and introducing them to as many people as possible outside of Korea.

This dream came true when Sullivan established a temporary Kimchi-making franchise called Paul’s Kimchi Co that opened at the world famous Van Abbe Museum, Eindhoven, Holland from the 22 November 2014 – 22 February 2015.

Due to the success of that project and an overwhelming passion for Kimchi, Sullivan put into process the plan to begin production in his home city of Liverpool.

On the 10 March 2016, the newly formed venture KIMCHI HUMAN opened its doors for the first time at STATIC Gallery.
